The peppers ferment in a 3% salt brine for 14–30 days before blending with vinegar, creating a more rounded flavor compared with a same-day cooked hot sauce. The fermentation process develops deeper pepper flavor, while distilled white vinegar provides the sharp acidic finish associated with classic Tabasco-style sauces. The recipe uses 17.6 oz (500 g) ripe red Tabasco peppers and produces approximately 32–40 fl oz (950 ml–1.2 L) depending on the amount of brine added and how much pepper pulp is removed during straining. Serve it with eggs, pizza, burgers, fried foods, seafood, rice bowls, noodles, grilled meats, and other savory dishes.
