This recipe creates a tangy sauce with mild-to-medium heat, deep roasted flavor, and natural body from green apple. Slow smoking softens the peppers and vegetables while developing a richer smoky aroma than a fresh blended hot sauce. The recipe takes about 3¼ hours, including 30 minutes of active preparation and finishing plus 2½–3 hours in the smoker. One batch produces approximately 3 cups (710 ml) of unstrained sauce. Serve it with smoked brisket, grilled pork, fried chicken, eggs, tacos, bánh mì, burgers, sandwiches, rice dishes, and other savory foods.
