Lamingtons are traditional Australian sponge cakes, cut into squares, dipped in a rich chocolate icing, and rolled in desiccated coconut. They’re soft, moist, and perfect for tea time, bake sales, and holiday gatherings. Ingredients For the Sponge Cake: 1 cup (225g) caster sugar 4 large eggs 1 cup (150g) self-raising flour (sifted) ½ cup (125g) unsalted butter, melted 1 tsp vanilla extract Pinch of salt For the Chocolate Coating: 3 cups (375g) icing sugar (confectioners’ sugar) ½ cup (50g) unsweetened cocoa powder ¾ cup (180ml) milk 2 tbsp unsalted butter For Rolling: 2–3 cups desiccated coconut Instructions Step 1: Make the Sponge Preheat oven to 180°C (350°F). Grease and line an 8x8" (20cm) square cake tin. In a large bowl, beat sugar and eggs together until pale and fluffy (about 5–7 mins). Fold in the sifted flour gently using a spatula. Add melted butter, vanilla, and a pinch of salt. Mix until just combined. Pour batter into the tin and smooth the top. Bake for 25–30 minutes or until golden and springy. Let the cake cool, then refrigerate for 1 hour before cutting (this helps firm it up). Step 2: Cut & Prepare Cut the chilled sponge into 16 squares. Place squares back in the fridge while you make the chocolate icing. Step 3: Make Chocolate Coating In a saucepan, combine icing sugar, cocoa, milk, and butter. Stir on low heat until smooth and warm (not boiling). Pour into a wide bowl for easy dipping. Step 4: Dip & Coat Use a fork or skewer to dip each cake square into the chocolate icing. Let the excess drip off, then roll in desiccated coconut until fully coated. Place on a wire rack or tray lined with parchment. Step 5: Let Set Chill for 30–60 minutes to allow coating to firm up. Tips for Best Results Refrigerate sponge before cutting to avoid crumbs. Use day-old cake if possible – it holds its shape better. For extra flavor, slice sponge and add a layer of jam or whipped cream between two halves (like a lamington sandwich!).
