This homemade hot sauce creates a smoky, earthy, fruity flavor with a bright citrus finish. The “chocolate” in chocolate habanero refers to the pepper’s deep brown color when ripe, not chocolate as an ingredient. Dry-roasting the peppers and garlic develops deeper roasted flavors before blending with citrus juices. Orange juice adds mild sweetness, grapefruit provides tartness and slight bitterness, and lime or lemon sharpens the final acidity. The recipe takes about 15 minutes and produces approximately 1 cup (240 ml) of sauce. The texture can be adjusted from a chunky salsa-style consistency to a smoother hot sauce depending on blending time.
