Chao Ga (Vietnamese Chicken Rice Porridge) Recipe

Chao ga (cháo gà) is a Vietnamese chicken rice porridge made by slowly cooking rice in a flavorful chicken broth until the grains soften and bloom. The porridge is served with tender shredded chicken, green onion, fried shallots, black pepper, fresh herbs, and lime. This home-style recipe uses one whole 4½ lb (2 kg) chicken to create both the chicken broth and shredded meat. The rice is toasted in rendered chicken fat before simmering, which helps the grains soften gradually while maintaining a light, tender texture. The recipe takes about 1 hour 30 minutes and serves 6–8 people. The mild chicken porridge pairs with Vietnamese coriander (rau răm), fresh cilantro, fried shallots, green onion, black pepper, and salt-pepper-lime seasoning. Chao ga is commonly enjoyed as a comforting breakfast, light meal, or simple dinner. It can also be served with gỏi gà (Vietnamese chicken salad) made from the same poached chicken. For the best texture, rinse and dry the rice before toasting, keep the broth at a gentle simmer, skim foam early, and avoid overcooking the rice.
