Banh Uot Recipe - Vietnamese Steamed Rice Sheets Made in a Skillet

Banh uot (bánh ướt) is a Vietnamese dish made from thin steamed rice sheets served without filling and topped with Vietnamese pork sausage, fried shallots, fresh herbs, vegetables, and nuoc cham. These soft, slightly chewy rice sheets are made from rice flour and tapioca starch. This home-style method uses a nonstick skillet instead of a traditional cloth steamer, making it practical for a home kitchen. The batter combines rice flour, tapioca starch, instant rice porridge powder, salt, shallot oil, room-temperature water, and warm water. The batter rests overnight before the sheets are cooked one at a time in a lightly oiled skillet. Banh uot is traditionally served with sliced cha lua, crispy fried shallots, bean sprouts, cucumber, lettuce, fresh herbs, and Vietnamese dipping sauce. Some versions also include shredded pork skin or dried shrimp. The active recipe takes about 70 minutes, including 30 minutes of preparation and 40 minutes of cooking, while the batter rests overnight before cooking. For the best texture, rest the batter overnight, stir it before every pour, maintain consistent low-medium heat, use a heat-retaining lid, and add fried shallots after the rice sheets cool slightly.
